Effectivity Of Chewing Cheddar Cheese In Increasing Salivary Calcium Ions

Objectives: Cheese as a dairy product is rich in minerals, vitamins, phosphorus, calcium and protein (casein) that reduces the insidence of caries. Cheddar cheese can reduce the risk of caries as the calcium ions in the cheese protects the teeth by increasing the pH of saliva (buffering effect), thus reduces demineralization and enhances remineralization. The aim of this study was to evaluate the salivary calcium ion concentration, which was measured at baseline, after 3 and 5 minutes of chewing in both the treatment and control groups.
Methods: This study was a clinical study with pre and post test control group design. Thirty students from the USU Dental Faculty Medan participated and were randomly divided into two groups, the treatment and control group. The concentration of baseline salivary calcium ions were taken. The treatment group were given 5 grams of cheddar cheese and the control group were given 5 grams of paraffin wax. Both groups were instructed to chew for 3 minutes, and then their saliva samples were collected. Subjects were instructed not to consume anything for 5 minutes and the saliva samples were collected again. Baseline saliva, after chewing for 3 and 5 minutes were taken to measure the salivary calcium ion concentration using the atomic absorption spectrophotometry method. The t test was used to analyse the average difference in salivary calcium ions concentration at baseline, after 3 and 5 minutes of chewing in both group.
Results: In the treatment group, the average of baseline salivary calcium ions concentration was 1,67 ± 0,44 µg/ml, after 3 minutes was 4,63 ± 2,21 µg/ml, and after 5 minutes was 2,34 ± 0,89 µg/ml, and there was a significant difference of (p<0,05). Whereas in the control group, the average of baseline was 1,61 ± 0,54 µg/ml, and after 3 minutes was 2,16 ± 1,22 µg/ml and after 5 minutes was 2,15 ± 0,77 µg/ml and there was no significant difference of (p>0,05)
Conclusions: Chewing cheddar cheese is effective in increasing the salivary calcium ion concentration, and it can prevent caries.
