Stability Study of anti Streptococcus mutans Immunoglobulin Yolk(IgY) Gel

The objectives: to analyse the incorporate stability of Immunoglobulin Y (IgY) in gel that is kept in storage with different time and temperature. The study uses IgY anti S. mutans formed inside the gel that contains Carboxymethylcellulose (CMC).

Methods: conducts the chromatography test and spectrophotometry test.

Results: Physical stability study is performed on day one, after stored for 14 days under 40C and 300C temperature. The result shows that there is a decrease in IgY physical stability on the 14th day storage compared to the first day, but it is not really significant (p> 0,001). This proves that there is an incorporation of IgY in stabilized gel stored up to 14 days.

Conclusions: The physical stability of IgY in the 40C temperature is better than the one stored under the 300C temperature (p<0,001).
