Novel Toothpaste Thickening System for Structuring Low-Water Toothpastes
Objectives: Water sensitive toothpaste ingredients require toothpaste formulations containing low levels of added water (<10% w/w). Currently marketed low-water toothpastes are typically thickened with xanthan and carrageenan gum mixtures which typically yield toothpastes with relatively poor stand-up and inherent stringiness. The aim of this study was to develop a rheology modifying system capable of efficiently structuring low-water toothpastes with good bead stand-up and minimal stringiness.
Methods: Toothpaste formulations were made at the lab scale using conventional toothpaste manufacturing methods and packaged into tubes. Except for the thickening system used, all formula ingredients and levels were held constant. Toothpaste sensory attributes were evaluated by 20 panelists in a double-blind study for degree of bead stringiness, flavor perception, mouth foaming and mouthfeel. Toothpaste bead stand-up was also evaluated in-vitro using the ‘Cuban Rack’ test. Results: Efficient structuring of low water toothpaste formulations (5% added water) was successfully accomplished by using a combination of carboxymethylcellulose (0.2-0.45%), hydroxyethylcellulose (0.3-0.45%), along with a small amount of an acidic chelating agent (0.1%). The panelists perceived the toothpaste thickened with carboxymethylcellulose and hydroxyethylcellulose to be less stringy than the toothpaste made with xanthan/carrageenan at the same levels (p=0.021), with the other perception attributes showing no statistical differences between the two toothpastes. The carboxymethylcellulose and hydroxyethylcellulose toothpaste formulation showed better in-vitro bead stand-up (Cuban Rack). Conclusions: A novel, cellulosic-based thickening system, capable of highly-efficient structuring of low water toothpastes (5% added water), has been devised which has reduced bead stringiness and improved stand-up compared to a xanthan gum and carrageenan based toothpaste at the same use levels.
